this is always in the fridge. french lentils have ounce for ounce almost as much protein as beef. let lentils soak in water with red wine vinegar (for flavor) for an hour or so to start the softening, that way you won’t have to cook them as long- preserving more nutrients. Simmer until tender. mix with dijon, olive oil, red wine vinegar, herbs de provence, flaked sea salt, fresh cracked pepper, red onion and parsley.
